Kellie’s Kitchen: Corn Tortillas

I’m obsessed with tacos! Well, I am really obsessed with all Mexican inspired food. Quesada is my favourite fast food restaurant chain. I eat salsa almost every day and add hot spices to nearly everything I eat.

A few years ago I purchased a tortilla press because I planned to make my own tortillas. But like so many other of my bright ideas I never really got around to it until earlier this year. I thought it would be super easy to do, but there is a knack to it and my first batch of tortillas were not the greatest. But once I got the hang of it I found that they really are super easy to make and well worth the extra effort. So delicious!

I use Bob’s Red Mill Golden Corn Masa Harina flour, but you could use any kind of flour you like depending on what kind of tortillas you want to make. I prefer corn tortillas but soft corn tortillas are very difficult to find in grocery stores here … and if you do find them, they are absolutely no comparison to these homemade ones!

Making a batch of fresh tortillas can be a little time consuming. The dough itself is just water and flour, but you need to let it rest for about a half hour before you use it. When the dough is ready, you break off and roll up little balls, which you then press flat in the tortilla press. It’s important that the balls are a suitable size for the size of your press so that the flat tortilla won’t be too thick or too thin. And you need to line your press with waxed paper or plastic wrap in order to be able to easily remove the tortilla. Once you have the tortilla flattened, you then crisp it up in a skillet on the stove.

When I make tortillas I have a little production line going … press, crisp, keep warm in paper towels … I’ll be pressing the next one while another one crisps. I don’t use any oil in my frying pan to lower the fat content. I have a Gotham Steel skillet that is non-stick, and it works well for cooking the dough. The tortillas keep well for several days or can be frozen. Once you’ve prepared your own from scratch, it’s very difficult to return to the store bought version.
