Today I weighed in and I’m down 3.3 pounds from last week. This was a surprise because last week was humid and even though I was in a Fitbit Workweek Challenge with my sister it was too hot to move. All week I pretty much sat as still as possible in a pool of my own sweat. Well, I must’ve sweated out some pounds! 🙂 But also I got back on track with my whole food plant based low fat low sodium way of eating. Whatever it was, it has translated into more pounds lost bringing my total since January 30th to 35 pounds. Woo hoo!
I belong to a few different groups on Facebook where people who are following the Engine 2 diet for weight loss gather to support one another. For the most part these groups are very supportive, helpful and motivational, but nearly every day there will be at least one person who is ready to quit because it’s too hard, they’ve tried a bunch of recipes and none of them have turned out, it’s too complicated, there’s too much cooking … and I feel like saying, “Are you sure you’re following the same plan as I am?” Because one of the reasons this is working for me is because it is so freaking easy! I don’t need to count calories. I don’t need to track anything. I don’t need to restrict calories. I can eat as much as I want, whenever I want. I feel so free! For the first time since I was a child I am eating for the pure joy of eating without feeling any guilt or without worrying about gaining weight.
I do the same thing for every meal, every day and it’s the easiest thing to do. All my cooking skills aren’t necessary. Anyone, whether they can cook or whether they’ve never gone into the kitchen, can prepare these types of meals in just a few minutes. Whether it’s breakfast, lunch, dinner, or a snack, 99% of the time all I do is build a bowl.
Build a bowl! It’s so easy!
Last week for breakfast I built pretty much the same bowl every morning because it was so delicious. One day I even built my breakfast bowl for dinner because when I went into the kitchen to make a supper bowl I smelled my fresh fruit and couldn’t resist.
My bowls are huge! And I fill them, rounding the top. Sometimes they are so full I have to eat the excess that spills onto the counter while I’m still in the kitchen. And after I eat the huge bowl if I’m still hungry I will immediately make another huge bowl and eat that too. I am free to eat until I feel satisfied!
Last week’s bowls started with canned peaches (packed in water not syrup or juice) topped with cinnamon, Kashi Organic Promise Autumn Wheat Cereal, bananas, strawberries, and unsweetened soy milk. A couple of those really hot days I threw in some frozen blueberries. Some days I also added chia seeds or Dorset Simply Delicious Muesli. A couple of days when I was feeling particularly hungry, I used more than one banana. I put together my bowls while my cup of coffee was dripping. It takes no time at all. I don’t need any particular kitchen skills. And the result is a very nutritious and delicious start to the day.
